Key Lime Pie

Key Lime Pie

* I love this recipe! It’s so refreshing.

Crust:
1 ½ cups fine graham cracker crumbs
6 tbs. butter
2 tbs. sugar

Press into a pie plate. Glass works well. Bake 375 degrees for 5-7 min until slightly browned. Cool.

Filling:
1 can sweetened condensed milk
4 egg yolks, whisked
½ cup lime juice (Fresh or bottled works fine. But it takes about 4 fresh limes for this amount)
1 tbs. grated lime zest

Pour into cooled crust. Bake 325 degrees for 12-15 min until set but still quivers when nudged. Cool on a wire rack. Serve with freshly whipped cream.

*It looks great to have a few slices of fresh lime to garnish the top with along with the cream when it’s done.
