Chicken Parmesan


I decided to try something slightly different than normal chicken parmesan and I think I prefer the changes. I sliced chicken breasts into thin cutlets and coated them in Italian style bread crumbs. I didn't even coat the chicken in egg or anything first. Then just browned each cutlet in the frying pan in a little olive oil. When those were browned (and mostly cooked through) I added a little garlic and onion spaghetti sauce to the bottom of a casserole dish and layered the breaded chicken cutlets on top. On top of the chicken I put a layer of fresh baby spinach and slices of fresh tomato (I really liked this little addition) and then topped that with some more spaghetti sauce. Finish it off with a good amount of mozzarella cheese and parmesan and bake until the cheese starts to get golden and yummy.
