This turned out really great and I just used whatever I had in my house at the time. Shannon couldn't stop going on about it...so it must be a winner. I chunked up a garlic and herb marinated chicken breast and sauted it in some olive oil with some onion, celery, carrots, and sundried tomatoes. When those were cooked through I added a little dash of curry powder, a box of garlic and herb couscous and chicken stock (enough to equal the liquid required for the couscous). Then I put a lid on it and took it off the heat to let the couscous do it's thing. Before I served it I chopped up a little fresh spinach and sprinkled that on top. I don't know what I would call this concoction of mine but I would definately make it again.
