Sweet Potatoes with Marshmallows
6 lbs. sweet potatoes, skins on (I have also used canned)
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. kosher salt
2 cups warm whole milk
4 tbs. butter
1 (16 oz.) bag large marshmallows
Preheat oven to 325. Bake or boil sweet potatoes. Peel and mash. Put potatoes back in stockpot over medium heat and add cloves, cinnamon, nutmeg, butter and salt. Pour in the milk a little at at time. Mix well. Spread potatoes evenly into coated 10"X14" baking dish, leaving 2 inches on the top for marshmallows. Add marshmallows on top in even rows. Bake for 30 minutes, checking frequently, or until the marshmallows are golden brown.
*When I made it I added a couple of eggs and I used canned sweet potatoes. I'm not sure how much of a difference it made.
I really liked this recipe because the sweet potato part isn't sweetened and so once you add the marshmallows it isn't too sweet.
