Spiced Chickpea and Zucchini Saute
*This is a great dinner and it doesn’t use any meat which is nice sometimes. But you could also serve it as a side dish. FYI: Chickpeas are also called Garbanzo beans.
1 medium onion, diced
4 minced garlic cloves
1 tsp. ground coriander
1 tsp. ground cumin
1 can chopped plum tomatoes (or fresh)
2 cans chickpeas, drained and rinsed
2 medium zucchini, quartered and diced
½ cup water
Salt and pepper
Heat 2 tbs. of olive oil or butter in a large skillet. Add onion and cook until translucent. Then add spices and garlic. Stir until combined and add tomatoes, chickpeas and zucchini. Add water and cover and simmer until zucchini is tender. Season with salt and pepper. Serve alone or with rice. Sprinkle with cilantro if desired
