Pound Cake
from Becky Hiatt
*This is so easy and a really perfect pound cake.
1 cup butter (2 sticks)
3 cups sugar
6 eggs
3 cups flour
1 cup (1/2 pint) heavy whipping cream
1 tsp. vanilla
With a mixer or a hand mixer, cream butter and sugar. Add eggs one at a time, beating well between each. Add vanilla. Add a little cream. Sift flour 2 times and then add a small amount at a time along with cream. Grease and flour loaf pans or bundt pan. Bake 325 degrees for 1 hour or so (Mine always seems to take longer). The top will crack and get very brown but keep checking with a toothpick or a knife put in the center comes out with moist crumbs. Don’t overbake! Let cool slightly and turn out on cooling rack to finish cooling.
