Monster Cookies
6 eggs
1 lb box light brown sugar (2 1/2 Cups, packed)
2 Cups granulated sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 24-ounce jar creamy peanut butter
1 Cup (2 sticks) butter, softened
8 ounces M&M's
8 ounces chocolate chips
4 teaspoons baking soda
9 cups quick-cooking oatmeal (not instant!)
1. Preheat the oven to 350. Line cookie sheets with parchment paper or nonstick baking mats.
2. In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the M&M's, chocolate chips, raisins, if using, baking soda, and oatmeal.
3. Drop by tablespoonfuls 2 inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags. These make about 6 dozen, so be prepared for a lot of cookies, or cut the recipe in half.
