Individual Raspberry Cheesecakes

Make as above. Fill muffin tin with muffin liners. Press one tablespoon of graham cracker crust firmly into bottom of muffin liner. Cover to ¾ of the liner with cheesecake filling (about ¼ cup of batter). Spoon a scant teaspoonful of raspberry jam in the middle and use a knife tip to gently swirl into filling. Bake about 17 minutes till set. The top will crack because of the jam filling. Cool completely.
