Corn Casserole


Corn Casserole

*A family favorite


Mix:
4 eggs slightly beaten

Add:
2 cans whole kernel corn, Do not drain
2 can cream style corn (or 1 can for a firmer texture)
Salt and pepper

Stir in 1 box (8 oz.) corn bread mix, such as Jiffy brand

Place in greased casserole dish. Bake at 400 degrees for 30 minutes or so, then test with a toothpick.

Over this spoon dollops of sour cream - 1 cup or so - On top of that, 2 cups shredded cheddar. Return to oven to melt cheese.
