Apple Cake





Apple Cake

1 cup (2 sticks) butter, diced, plus extra for greasing (*Emily says you can substitute 1 generous cup of applesauce)

3 apples, peeled, cored, and sliced

1/2 cup sugar

1/2 cup brown sugar

1/2 tsp. vanilla extract

1/2 tsp. ground cinnamon

4 large eggs (*or 1 cup egg substitue)

1 cup flour

scant 3/4 cup whole wheat flour

1 tsp. baking powder

1 tbs honey

Preheat oven to 350 degrees. Grease and line a 9 inch round cake pan (or spring form pan). Arrange the apple slices in the bottom of the prepared pan.

Put all the remaining ingredients, except the honey in a food processor or blender and pulse until well combined. Pour the cake batter over the apples and bake in the preheated oven for 1 hour until cooked through - a skewer inserted into the center of the cake should come out clean.

Remove from the oven and let cool in the pan, then invert onto a plate and remove the lining paper. Turn back onto a serving plate. Serve with drizzled honey.
