Teryaki Salmon

¼ cup soy sauce
3 Tbsp. sugar
OR!!
¼ cup soy sauce
2 Tbsp. mirin
1 Tbsp. sugar
Note: You can adjust the sweetness of the teriyaki to taste.
Mix the ingredients in a saucepan and stir over medium heat until the sugar has dissolved. Do not burn. The sauce can be used immediately or cooled and refrigerated. Rinse salmon fillet under cold water and pat dry. Brush sauce on salmon (can marinate for 10 minutes).
Broil salmon, basting with reserved sauce periodically. Too much sauce at one time will just burn. I make a tray out of foil and place it on a cookie sheet (this makes cleanup easy). Spray foil with a vegetable spray. Turn off broiler just before salmon is done. Salmon will continue to cook a little in the hot oven. For goodness’ sake, don’t overcook the salmon!
