Latkes (Potato Pancakes)

Latkes (Potato Pancakes)

4 Yukon Gold potatoes, grated, and press out excess liquid on paper towels
¼ -½ medium onion, finely chopped
2 eggs lightly beaten
¼ cup flour
1 Tbsp. sugar
1 tsp. coarse salt

Combine. Pour ¼ cup of batter into hot canola or olive oil in a non-stick frying pan. Fry until golden. Serve hot with a dab of sour cream and a spoonful of applesauce.
