Cranberry Bread

Cranberry Bread

2 C flour
1 C sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 C OJ
2 Tbsp veggie oil
1 Tbsp grated orange peel ( used clementine zest and it worked out fine)
1 egg, well beaten
1 1/2 C fresh/frozen cranberries, coarsely chopped
1/2 C chopped nuts


Preheat oven 350 degrees F. Grease a 9*5 loaf pan. Mix dry ingredients (first 5) in medium bowl. Stir in juice, oil, peel, and egg; blend well. Stir in cranberries and nuts. Spread evenly in loaf pan. Bake 55 min, or until toothpick test comes out clean. (If using smaller loaves, start with just 45 min) Cool bread in pan for 15 min, then remove and cool completely.
I doubled the recipe to make ~7 mini loaves.
