Shannon found this recipe for me and it turned out so great that I already want to make it again! And it couldn't have been easier. I served it with jasmine rice and had it as the main meal but it would also be really good with grilled chicken or beef as a side dish.
1 tablespoon finely chopped garlic
Salt and pepper
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1/4 teaspoon crushed red pepper flakes (I used a little less)
2 eggplants, cut into 1/2" thick slices
olive oil or vegetable oil
*I grilled some fresh tomato slices with it too which was also really good
Crush garlic and add to a small bowl. Whisk in the vinegar, soy sauce, sesame oil, and crushed red pepper flakes. Set aside.
Heat grill to high (I just used a grill pan). Slice each eggplant into 1/2-inch slices and brush with oil and season with salt and pepper. Grill until slightly charred and just cooked through. Place on a platter and drizzle with the vinegar mixture or serve it on the side.
